Chicken Noodle 
 
Place one large chicken breast in a pot and add eight cups of water, quarter-cup of chopped fresh parsley, a teaspoon of dried dill, one diced onion, and two bay leaves. Simmer for an hour. Remove the chicken breast and shred the meat with two forks. Skip the fat and foam from the top of the remaining liquid in the pot. 
 
Return the chicken to the pot and add two chopped carrots, a stalk of chopped celery, and a cup of frozen peas. Simmer that for another hour. Add a cup of fine egg noodles and tablespoon of lemon juice in the last 10 minutes. 
 
Minestrone 
 
Minestrone is rich in antioxidants and very easy to make. Chop up a zucchini, a summer squash, a leek, and a large carrot. Place those vegetables into a pot and add a can of diced tomatoes, a cup of chopped kale, and six cups of chicken or vegetable stock. Add a quarter-cup of chopped fresh basil. 
 
Bring the soup to a boil and reduce to simmer. Simmer for an hour. In the last 15 minutes, add a half-cup of orzo. Serve hot with garlic bread. 
 
Thai Curry Soup 
 
If your mom likes spicy chilies, you can spice this soup up to match her tastes. Pour a can of coconut milk into a pot and add four cups of chicken broth. Stir in the juice and grated peel from a lime. Add three cloves of garlic that you’ve minced, a half-teaspoon of lemongrass paste, and a cup of shredded chicken from a rotisserie chicken. 
 
Add one sliced carrot, two tablespoons of fresh cilantro, and one sliced red pepper. Simmer that for 40 minutes. Add half a package of rice noodles in the last 10 minutes.
